What exactly are spring greens?
That term is used to market baby greens of any variety. For me spring greens refer to the first crop of greens coming out of the ground. They are tender versions of greens we'll have all season. They are usually in the brassica family (choys, kales, mustards, etc) because they will withstand a nip of frost and germinate despite cool soil.
